What is Gotong Batangas?

Gotong Batangas is not the typical goto because it does not contain rice. That is what separates it from regular goto. It is quite similar to another filipino dish called Papaitan that also uses innards as its main ingredient.

Gotong Batangas is usually cooked using tripes but other innards and sometimes even meat is added to the mix. This kind of goto originated from Lipa, Batangas. It is actually not that hard to cook Gotong Batangas and in this article you will see that. All you need really is patience in making sure you are able to boil and soften the main ingredients well and the garnishes will follow naturally based on your preference.

Ingredients Needed:

  • oil
  • garlic
  • achuete
  • tripes
  • vinegar
  • Kosher salt/pepper
  • Chili (optional)

How to Cook Gotong Batangas

Make sure you soften the tripe meat by cooking it slowly and thoroughly in boiling water. After that you can cut it into small peices as you wish. Then you can saute the meat in oil, garlic, and achuete until it is golden brown. Then you add around 1/8 cup of vinegar. After a few minutes you can go on and add water depending on how much soup you want. Add salt and pepper to taste. Let it boil until the tripe is tender. Add vinegar if you think it is lacking in taste.

Of course, you don't even have to go through all the hassle of cooking gotong batangas. If you want, there are many places out there where you can eat gotong batangas. For instance, one place that I love going to with friends would be at the edge of Tagaytay almost near the arch of Nasugbu, gateway to some popular Batangas Beaches.

it really tastes so good. i had one in night market when i was staying in Bugtong na Pulo Lipa. i am amazed knowing that the goto they have is not the kind of goto i knew. it doesn't contain rice! but it is so delish!

>+< just a little comment and correction all my friend, the topic is GOTONG BATANGAS originated in Lipa City, Batangas, as i've known, GOTONG BATANGAS is not sour taste, there is no vinegar added in GOTO of BATANGAS, if there is vinegar they called it "DINUGUAN" in Batangas and "SERKELE" if Beef innards in part of Bulacan, like Baliwag, and "TINUMIS" if they use PORK innards! in Bulacan. so "TINUMIS" is from Bulacan.

@ Avalon, ang goto sa batangas walang kanin pero may suka un, kaya nga masarp pulutan, para syang papaitan n walang pait. Ang dinuguan may dugo ang goto wala okies...
